MUG BROWNIE

SQUID ROAST



















·         Squid - 1kg
·         Chili powder - 1 ½ tbsp.
·         Coriander powder -  1 1/2tbsp
·         Turmeric powder - 1tsp
·         Ginger - 1 tbsp. sliced into thin pcs
·         Garlic - 1 tbsp. sliced into thin pcs
·         Tomato - 1 big
·         Green chili - 1 pc. -  slit into 2
·         Pepper powder - 1tbsp.
·         Coriander leaves -  1/2cup finely chopped
·         Curry leaves - 20 gm.
·         Salt -  to taste
·         Onion 3 thinly sliced
·         Coconut oil – 3-4 tbsp.
Method
·         Mix the following in a bowl - squid, ginger, green chili, tomato, salt, chili powder, coriander powder, turmeric powder and ¼ cup water. Cook this mixture in a in a pressure cooker at a high flame until the cooker whistle blows three times. Keep this cooked mixture aside.
·         Heat 2 tbsp. coconut oil in a pan. Once hot, add onion, garlic, curry leaves, salt, and sauté until it turns golden brown in color.
·         Add cooked squid to the sautéed onion/garlic/curry leaves mixture. Keep stirring until it turns dry.
·         Add pepper powder and 1 tbsp. coconut oil. Mix well.
·         Garnish with coriander leaves
·         Serve hot
